There is an absolute standout counter for taking on Mega Gallade, Mega Rayquaza. It has the best move in the entire game, that is Flying-type, is overall a very powerful Pokémon and also boosts candy and candy XL if at mega level 2 or 3.

Of course, you can only have one Pokémon Mega Evolved at a time, so besides Mega Rayquaza which other Pokémon should you use? Two other counters that standout are Dawn Wings Necrozma and non-Mega Rayquaza.

These Pokémon have all been avaliable over the last few months too. Mega Rayquaza appeared in Mega Raids, and Dawn Wings Necrozma featured in a Necromza Raid Day.

Otherwise, Origin Forme Giratina, Mega Gengar, Yveltal and Dusk Mane Necrozma are all good choices that have appeared recently. Using any of these will stand you in good stead to take these Raids down easily.
