The three playstyles you can pick between are Soldier, Adivser, and Scout. You're able to "pick" one of the playstyles at the first sign of trouble in the tutorial section of Kingdom Come: Deliverance 2.
Truth be told, though, the playstyle you pick here doesn't have to impact your decisions going forward in any way. Just because you pick a specific option when talking to Captain Thomas outside of Trosky doesn't mean you can't select another playstyle later on.
While you can absolutely stick with one playstyle throughout the entire story in Kingdom Come: Deliverance 2, the one start with doesn't have to enforce your choices moving forward.
